Working at a local diner, the non-vegan item I crave most often is pancakes.
Banana pancakes to be specific.
Perhaps the most frustrating thing about this craving is that banana pancakes are so easily made vegan. I’m genuinely suprised that they’re not offered at more greasy spoon breakfast joints, particularly in the city.
Then again, their simplicity is also reason enough to simply make them myself.
- 1/2 c whole wheat flour
- 1/2 c spelt flour
- 2 tsp baking powder
- 1 ripe banana, mashed [+ extra banana slices for topping]
- 1 1/4 c So Delicious Coconut Milk
- 1/2 tbsp Sun Crystals
Do I really need to explain the pancake making process here?
Mix together, pour in skillet, flip, top with maple syrup, enjoy. ♥
