PB&J: a love affair

One of the reasons I’ve taken to veganism like a rabbit to carrots is that I LOVE, LOVE, LOVE Peanut Butter and Jelly Sandwiches.  Perhaps it’s a little cliche to push such a simple meat-free dish on a vegan blog, but I think this lunchbox treat is WAY underrated. It’s quick, it’s simple, and given the right ingredients, it’s relatively healthy.

I like to use MaraNatha All Natural Peanut Butter [it’s a bit more expensive than some natural brands, but the taste and no-stir mixture are totally worth the extra pennies] and any pure fruit jelly [read: the sweetener should be fruit juice, not high fructose corn syrup] on whole grain vegan bread [watch out for milk in the ingredients!].  And the great thing is, this is one dish that most everyone enjoys from time to time, if nothing else, for the sake of nostalgia. So offer your non-vegan friends a portion as well!
