Raw Slaw & Sunflower Seed “Tuna”

Yesterday, I made Raw vegan mayonnaise. How cool does that sound? It’s so simple!

nut cream in a cup.

Here’s the recipe [inspired by this one from Gone Raw]:


1 c. cashews, processed into a fine powder
1/2 lemon, juiced
1 small garlic clove, chopped
1/2 tsp sea salt
1 tsp apple cider vinegar [or to taste]
1 tsp olive oil [or to taste]
water [added to desired consistency]
a few turns of the pepper grinder [is pepper raw?]

Place all ingredients in blender/food processor & blend to desired creaminess.
Refrigerate in a glass jar for up to a week.

Enjoy with recipes like Raw “tuna” salad:

add chopped celery, chopped red onion, & soaked, processed sunflower seeds. enjoy w/ flax crackers.

And Raw slaw:

add a splash of water to mayo. mix in the vegetables of your choice.
