Today’s Make Something Monday is created especially for my dad, a peanut butter fiend:
For as long as I can remember, my dad’s favorite sweets have involved peanut butter: Reese’s Cups, Do-Si-Dos, & my mom’s peanut butter cookies. All tasty, but not so healthy. So, as a part of the Life Tastes Better project, I wanted to create a peanut butter dessert that my dad could enjoy [almost] guilt-free as well as get a burst of energy from to combat radiation fatigue. So, here it is: the perfect cookie to enjoy while kicked back & watching The Weather Channel [my dad’s “favorite” station].
3/4 c almond butter
1 c whole wheat pastry flour
1 c organic all purpose flour
1 1/2 c rolled oats, uncooked
1 tbsp ground flax seed
2 tsp baking powder
a pinch of sea salt
3/4 c coconut oil
2/3 c maple syrup
2/3 c agave nectar
1/4 c coconut milk
1 tbsp vanilla extract
Preheat oven to 350 degrees.
In a large bowl, whisk together dry ingredients [flours, oats, flax seed, baking powder, salt].
In a smaller bowl, combine wet ingredients [almond butter, coconut oil, coconut milk, agave, maple syrup, vanilla] until smooth.
Pour wet ingredients into dry & stir until combined.
For more uniform cookies, roll dough into balls using damp hands or simply place large spoonfuls onto a greased cookie sheet & flatten with a fork.
Bake for 18-20 minutes or until cookies have browned slightly.
*Note: these cookies will remain quite doughy & crumbly until cooled completely so be careful removing them from the cookie sheet & allow to cool before enjoying…or eat them straight from, the oven & clean up the mess later.
