Have I mentioned that I love Angela Liddon of Oh She Glows?
I’m pretty sure I have, but it has to be said again. I still have yet to make a recipe from her blog that didn’t completely satisfy my taste buds. Not to mention the fact that the girl uses chia seeds like they’re going out of style, which I love.
In case you’re unaware of the wonder of chia seeds, here’s a quick lesson:
Used in many raw recipes & smoothies, chia seeds are a superfood of fabulous hydration. When exposed to liquid, these little black dots turn into a gel-covered tapioca balls that pack a healthy dose of omega-3’s, ease digestion, & balance your blood sugar.
Do they look tasty? Not at all [check out the visual in my bowls of raw mush post], but with the right ingredients at their side, they’re delicious.
Take for example, this “instant” chia seed oatmeal with a blueberry & banana twist:
Ingredients [inspired by Oh She Glows’ Banana Bread Batter Oats]
3/4 c steel cut or rolled oats, ground into a flour
2 tbsp chia seeds
1 banana, frozen*
2 cups So Delicious coconut milk + a dash for banana soft serve
1/3 c blueberries, fresh or slightly thawed from the freezer
2 tbsp pure maple syrup
pinch of salt
2 tsp pure vanilla extract
In a blender, process the oats and chia seeds into a flour.
In a medium-sized pot, combine your oat/chia flour with coconut milk.
Stir flour mixture together with salt, blueberries, & maple syrup over low to medium heat.
Once desired thickness has been achieved [add more coconut milk if oats are too thick], remove from heat, add vanilla, cover, & set aside.
In a blender or food processor, combine frozen banana with just a dash of coconut milk [enough to keep things moving] & process until smooth & creamy like banana soft serve.
Place oats in bowl & swirl banana soft serve on top. Enjoy.
*Personally, I like the combination of hot & cold for this recipe, but if you prefer all your ingredients to be hot, simply process an unfrozen banana with coconut milk to make a banana cream instead of soft serve.
