Quick Bite: Happy Birthday, Harry!

In honor of Harry Potter’s birthday today, I celebrated with my own vegan version of a butter beer smoothie. It probably tastes nothing like butter beer, but it was still delicious.

Health Coach Note: I tried to make this smoothie as healthy as a dessert smoothie can be, but there is a large dose of healthy fat in the form of cashew butter. Have it only as a special Potter birthday treat if you’re trying to lose weight. And if you’re watching your sugars, keep the maple syrup to a minimum, a little gives a lot of flavor.

less sickly butterscotch? that’s a hard flavor to imitate with healthy ingredients.

Ingredients [adapted from the Cake Batter Smoothie]

1 banana, frozen
2 tbsp cashew butter
1 tbsp vanilla
1/2 can light coconut milk
a small drizzle of maple syrup to taste

Place all ingredients except maple syrup in blender & process until smooth.
Drizzle maple syrup on top. Enjoy.
