Make Something Monday: Pumpkin Pie Smoothie

Have I mentioned how much I love pumpkin? Because I do.
Here’s my latest attempt to quiet my addiction: Pumpkin Pie Smoothie!

pie you can drink.

Ingredients

1 banana, frozen
1/4-1/2 c So Delicious coconut milk [or canned coconut milk for extra creaminess]
1/3-1/2 c canned pumpkin [to taste]
1 tbsp cinnamon
1 tsp nutmeg
1 date, pitted
a drizzle of maple syrup [optional, or to replace date]

Place all ingredients in blender & process until smooth.
Add more coconut milk for a thinner smoothie, less for a soft-serve like texture.
Enjoy!

Bonus points: add a handful of spinach for that extra burst of energy…it just won’t look as pretty.
