Wellness Wednesday: Last Week I Was Shot [by a camera]

Exciting things are happening:

First, I graduate from the Institute for Integrative Nutrition next week! I can say this with certainty because I officially passed my final test last night. That also means that my student rates are going away soon! Sign up for a free health consultation before October 1st to take advantage of the lower prices & start the 6 month program.

Second, I’m officially signed up for next month’s Vegan MoFo for the very first time! That means you’ll be seeing more frequent posts in the coming weeks. My unofficial theme of the month focuses on converting your favorite traditional baking recipes into gluten-free, vegan deliciousness. So if you have a recipe for me, send it over or leave it in the comments below.

And finally, last week, I teamed up with Aaron Ehinger Photography to capture some pretty amazing images for my the Health Happiness & Hula Hoops website & facebook page. Here are some of my favorites:

Fun fact: everyone involved in the making of these photos is vegan. There’s me [of course], the amazing photographer: Aaron Ehinger [who is a vegan friend I met working at The Chicago Diner], and then there’s the vegan genius behind the t-shirt I’m wearing: Callie England of Rawxies.

I purchased this t-shirt on a whim after seeing it as part of a Vegan Cuts deal. Since then, I’ve become a little obsessed with Callie’s brand & website. As a fellow designer, I appreciate the image that she’s developed for her products [and, of course, I love her bright pink color scheme]. I have yet to try her vegan [AND gluten-free!] snack cookies, but they’re definitely on my wishlist. Callie clearly has a high standard for healthy, natural ingredients so I’m sure they’re delicious.

In the meantime, I’ve been browsing the Rawxies youtube channel & trying out awesome recipes like this raw mock tuna salad:

the rice cake makes this photo look quite beige, but I swear it’s full of colorful nutrients!

Ingredients [slightly modified from the original]

1 1/2 c almond meal [I processed my own from some raw almonds I had on hand]
1/4 c red onion, chopped
3-5 large stalks of celery, chopped roughly to fit food processor
1 1/5 tbsp dulse flakes
2 tsp sunflower seeds
2 tbsp olive oil
2 cloves of garlic
1/2 tsp celtic sea salt
the juice from 1 lemon
ground pepper to taste

Place all ingredients into food processor & pulse until combined.
Serve on toast, a rice cake, or atop your favorite salad. Enjoy.
